During lock-down we need to boost our immune systems and the last few days left me feeling sluggish and drained.
With a packet of potent Raspberry powder in the back of the cupboard, I’ve rustled up a refreshing, raspberry kick-in-your-face drink.
MISE EN PLACE (preparation)
You will need:
- Ice cubes
- Measuring spoons and cups
- A Blender
YIELD: One large glass / two medium sized tumblers
|1 x 400ml||Reduced Fat Coconut Milk|
|1 cup||Mixed Frozen Berries||250ml|
|1/3 cup||Orange juice (no pulp and bits)||80ml|
|1 Tablespoon||Fresh As Raspberry powder||15ml|
|Pinch||Fresh Ginger; grated||Approximately 2-5ml|
|1 cup||Ice Cubes||250ml|
- Place the coconut milk, orange juice, honey, frozen berries, powdered Raspberry, grated ginger and ice in a large blender. Blend on high until the smoothie is totally smooth.
- Drink while still cold; garnish with more berries, Raspberry powder or fresh sprigs of mint.
