Strawberry Fields Ice Cream Lollies
- 600 ml Double Cream
- 1 teaspoon (5ml) Vanilla
- 3 tablespoons (45ml) Four Cousins Strawberry Fields liqueur
- 1 x tin (397g) Sweetened Condensed Milk
- 200ml Cream, whipped
- Crushed freeze-dried strawberries
- To make the ice cream, whisk the double cream, vanilla, Four Cousins Strawberry Fields and condensed milk together until smooth and thickened slightly.
- Fold in the whipped cream, stir in some of the crushed dried strawberries, then pour into a container which is suitable for the freezer; freeze for about 4 hours or until firm.
I acquired a silicon ice-cream lolly mould (pictured right) to create the Strawberry Fields ice-cream; they are perfect for mini “magnum” ice cream lollies and can be reused.
