12 Tonics to Christmas: Rosemary & Pear Ice Lollies

Summer sun and holiday fun! Cool off with these funky and delicious ice lollies; which will leave you thinking they are “naughty” but they’re so “nice”.  Suitable for adults, and even kids with a discerning palate.  I added extra bits of pear to the mix for added texture, this mixture will also freeze well in a container for a fresh sorbet.

Here’s my 12 Tonics to Christmas ice lollies with Pear Toni Glass Tonic.

ABOUT THE TONIC

PEAR AND ROSEMARY ICE LOLLIES

Ingredients:

  • 50ml Sugar Syrup
  • Fresh sprigs of Rosemary
  • 1 tin Pear Toni Glass Tonic (chilled)
  • Prepared ice-lolly mold

Method:

  • Ensure you have all your equipment and ingredients ready.
  • Prepare a fresh sugar syrup infused with rosemary. Once completely cool, strain the sugar syrup to remove the rosemary.
  • Combine the sugar syrup and Pear Toni Glass Tonic in a jug and pour into molds.
  • Freeze until set.
